Brora Heritage is the brand name for Clyne Heritage Society (registered charity) and Clyne Trading Limited. Established in 1998 we are now going through an exciting period of development. Our new £5 million Heritage Centre with museum, retail, community space and eatery will open in August. Located on the A9 (NC500 route) we shall provide a vital, year-round visitor attraction to the area. We are seeking a talented, highly driven and passionate Head Chef to lead our culinary team in delivering exceptional dining experiences. The ideal candidate will possess a strong background in hospitality and culinary arts, with a proven track record of managing kitchen operations efficiently. As the Head Chef, you will be responsible for overseeing food ordering, preparation and production ensuring that all dishes meet our high standards of quality and presentation. By joining us from the beginning you will be able to shape and develop our business model and be a key player in our future.
You will be working 5 days out of 7, including weekends. There is limited evening work which would be 2-3 nights per week from May-September.
Responsibilities
- Lead and manage the kitchen team, fostering a positive and collaborative work environment.
- Oversee all aspects of food production and preparation, ensuring outstanding attention to detail and presentation standards.
- Develop with the manager innovative menus that highlight the very best Scottish (Highlands) seasonal and sustainable ingredients.
- Ensure compliance with food safety regulations and maintain high standards of cleanliness in the kitchen.
- Train, mentor, and supervise kitchen staff to enhance their skills and ensure consistency throughout the operation.
- Manage stock levels, placing orders for supplies as needed while minimising waste and constantly controlling costs and margins
- Collaborate with front-of-house staff to ensure seamless service during busy periods.
- Monitor kitchen performance and implement improvements where necessary to enhance efficiency.
Skills
- Strong background in hospitality with extensive culinary knowledge and experience
- Proven experience in supervising kitchen staff and managing a team effectively.
- Experience of working in an award-winning establishment with a minimum of 1 AA Rosette or equivalent.
- Excellent skills in food production and preparation techniques.
- In-depth understanding of food safety practices and regulations including COSHH and CookSafe or other HACCP based system.
- Exceptional leadership abilities, with a focus on motivating and developing team members.
- Ability to work under pressure in a fast-paced environment while maintaining attention to detail.
- Creativity in menu development with an emphasis on seasonal, local ingredients produced to a quality restaurant standard.
- Strong communication skills to liaise effectively with both kitchen and front-of-house teams.
